I dread doing desserts but it’s time to overcome that. So this experiment was all tropical and light. The texture of the mousse wasn’t quite as I would have liked it to be but the flavours were totally blooming. Coconut Soft Mousse with grilled and caramelized Pineapple and a generous sprinkling of coconut soil to tie it all.
