This not-so-appealing combination has been on my mind for a while, finally it made appearance unto the dining table a few weeks back.
A light soup, where nothing dominates but all mingle gently to create many subtle layers of flavours. You pick the sweetness of coconut, the earthiness of the beetroot, hint of chilli and a dash of spices! A coconut and coriander biscotti on top adds a great textural crunch. And my homegrown fennel frond makes it look a tad prettier.
I might add so myself, I felt so good to serve it, just a sort of validation that you are doing something right there, tinkering in the kitchen.
