Garden fresh Wild Cucumber “Kachri” Aachar

The joy of cooking your first harvest is indeed special. Tender baby kachris, plucked straight from the garden, turn into a fresh pickle. The crackle of mustard, fennel and onion seeds with a temper of hing and a twang of green chillies in the pickle does so much good to an otherwise boring summer lunch. Relish it with hot parathas.
